No cell phone zone at dinner. Anyone every ask you to silence your phone while eating? Most of the time without even asking, our #hunting guests will put their phones out of sight when we're having the evening meal. The most amazing things tend to happen including fellowship and rich conversations. At the lodge we often have mixed groups of guests who have never interacted with one another before. So at dinner time, I try and make sure that there's plenty of conversation at the table that's inclusive -- and by the end of their trips, many are planning to come back next season together. “Your dinner table can be a sanctuary from the outside world, with its angry cries for and against. It can be a place to process the events of the day, the week, the month, the year, and always to celebrate the delicious.” Sam Sifton I firmly believe that silencing your cell phone at meal time to talk to each other is incredibly important. I was raised in the 50s & 60s in a small rural Texas town where home entertaining and conversation were part of our everyday lives. RECIPE BELOW! Want the most UNUSUAL way to prepare your venison that will have your guests raving? My mentor, @chefmoschetti taught me how to do this years ago and for any that have had it, you know how divine it is. We use the #Traegergrill for about 3 minutes a side on a 7lb loin, then pop in a 375 degree oven for about 5 minutes - our internal is around 120 degrees because this dish is best prepared rare. Why not give it a try - don't over maritnate (for too much time). We serve a Wasabi mashed potato dish and grilled broccolini or asparagus with is. Bon apetit and happy #hunting! Gingered Venison 15- 8 oz. portions of Venison or Beef Marinade for 15 pieces: 6 ea Lemon grass (sometimes we use the squeeze tube in the produce section of fine grocery stores) 1 head Garlic - sliced 1 ea Orange - cut into rings 2 ea Shallots - julienne 1 bu. green onions - cut on the bias 1 c Sweet Soy sauce (find at an Asian marked usually but Amazon too) 4 c Soy sauce 1 c Ginger - peeled and sliced (sometimes we use the squeeze tube in the produce section of fine grocery stores) Procedure: Combine all the ingredients together and marinate venison/beef for 4 - 6 hours. Before cooking: Clean the marinade off the beef and pat dry. Meanwhile season the grill with oil. Season the beef lightly with black pepper and grill the steak to the desired temperature. Let rest. SAUCE: Strain the marinade, reduce, add a touch of Demi-glace and a big pat of butter just before serving - it's heavenly.
